Clover flowers jam
195g Trifolium pratense (red clover) flowers
400g cane sugar
Juice of 1 lemon
Wash the flowers to remove dust and impurities. With a knife remove the green leaves and
gather the petals in a pot with high edges. Cover with cane sugar, add lemon juice and
water, then put the pot on the heat. Let the mixture boil for 20 minutes, stir often it and
remove foam if necessary. Take the pot off the heat and mix the jam with a hand blender.
Put it in the pot again and let the mixture boil for 5-10 minutes more, till it gets a creamy
texture. Then pour it in a previously sterilized glass jar with hermetic sealing. Close the jar
tightly, turn it upside down and leave it standing overnight in order for it to vacuum seal.
